I decided just to have a thankful post today. My heart is full of it thankfulness.
I have never been so happy to have 2 dreary days full of rain! Our garden, grass, trees…..all needed it so much!
And to wake up to it this morning? Heavenly! The steady rain and cool breeze just lulled me back to sleep.
One of the things that made me smile was to look out at our garden and see our plants soaking it all in. So I decided to take pictures–only from inside, though.
Todd has been out watering (our garden only!) faithfully, and we're on our 3rd week of harvest. It's still pretty early, but this haul of tomatoes will make a double-batch of salsa.
As you can see in the far away picture, there's still a lot of green tomatoes on the plants. Eventually I'll have enough coming in to can the tomatoes, too.
It's funny….I really don't like tomatoes or green peppers by themselves. But I sure do enjoy some fresh salsa and chips with those same ingredients!!
I made a boatload of it last year–and have already made 2 double-batches this year.
The final day of harvesting tomatoes last year, Todd brought in a 2nd box load–at least twice the size of the bucket above–again! He PROMISED me it was the last of the tomatoesI (Can you tell I was sick of tomatoes?!)
He didn't keep his promise! He found a few more hiding….
But the Lord was good and I even actually had a need for them to finish up a batch of something.
NEVER in my wildest dreams did I ever think I'd CAN TOMATOES, of all things! But I use them for my spaghetti sauce and other recipes all year. I love being able to go down and pull a jar from my shelf.
Thank you, Lord, for all your blessings–including giving me a faithful, hard-working husband. Thank you, My Love!

I finally did some canning this year too. I did a bushel of g.beans and now I am looking for peaches but having no luck, Cranes has No U-PICK on apples and peaches this year. What are we gonna do??? 🙂 I love when I hear the jars POP….

I know!! I LOVE that pop!!
We're really bummed about Cranes U-pick and feel badly for THEM, too. However, the kind of peach we were really happy with for canning was Flaming Fury; we've gotten them at Molkers Orchards http://www.moelkerorchards.com.
They are available–limited quantity?–this year. They are not one of my favorites for eating fresh, but they are free-stone and stay a beautiful color and shape (and taste) for canning. We'll probably be going next week to get some. Just saw they are available now.
